Vegetarian red lentils soup

 
This soup is very tasty, simple and does not take much time.

 Ingredients
 1 cup of red lentils
 4 cups of water
 olive oil 1 tbsp
 1 medium onion
 1/2 medium carrot
 3 medium tomatoes
 salt, pepper, paprika, lemon juice optional

Method of preparation

1. Wash the lentils, finely chop the onion, grate the carrots, pour boiling water over the tomatoes for 15 minutes.

2. Put the lentils in a saucepan, pour water and cook until the lentils become soft.

3. After 15 minutes when the water boils, add onions and carrots to the lentils.

4. Peel the tomatoes and chop finely. Pour olive oil into the pan and add chopped tomatoes. Cook for 2-3 minutes. Put the tomatoes in the soup.

5. Add salt, pepper and seasonings. Add lemon juice as needed.
