Mahshi (stuffed vegetables) grape leaves

Mahshi (stuffed vegetables) is an Egyptian national dish. Zucchini, peppers, eggplant, cabbage, grape leaves are stuffed. In Egypt mahshi is usually without meat. We will cook rice in grape (vine) leaves.

Ingredients
 1 medium onion
 250 g of mashed tomatoes
 2 tbsp of tomato paste
 4 cloves of garlic
 50 ml of vegetable oil
 1 tsp each: salt, black pepper, paprika, dry garlic, cumin (zira)
 500 g of rice
 200 ml of water
 dill, parsley, cilantro optional 
 1 pack frozen grape leaves
 Method
 Pour oil into a pan, add onion and garlic, fry over low heat. Add tomato paste, spices and salt, mashed tomatoes. Add 200 ml of water. Mix everything, cover and cook for 30 minutes or until the sauce will be ready.
 Wash the rice. Add to the sauce. Mix 2 min. Add chopped dill, parsley, cilantro. Mix all the time (5 minutes). Cool down.
 Рut rice in prepared grape leaves (boil fresh grape leaves for 2-3 minutes in salted water or use frozen ones) and make rolls.
  Put the mahshi in the pot, add salt, vegetable oil, pour water to cover the makshi. Press on top with a plate. Cover and cook on medium heat until ready. Enjoy your meal😉
